Colombia - Popayan (the caffeinated 50%)
Sourced from the lush Cauca region of Colombia and proudly supplied by Cofinet, this coffee reflects the unique climate of central-western Colombia. Nestled between the Western Cordillera mountains and the Pacific Ocean, Cauca enjoys cool breezes and high elevations, creating ideal conditions for exceptional coffee.
Colombia is world-renowned for its washed coffees, and Cauca’s producers carry on that tradition with care. Ripe cherries are handpicked and depulped the same day, followed by a natural open-air fermentation lasting 12–36 hours. The beans are then thoroughly washed and carefully dried—whether on patios, in parabolic or solar dryers, or with mechanical methods—ensuring a clean, bright, and consistent cup.
Colombia - La Flaca (the decaffeinated 50%)
Unlike most decaffeination methods carried out in Europe, this coffee is fully decaffeinated in Colombia—preserving both freshness and flavour at origin. The challenge lies in carefully removing caffeine while protecting the coffee’s natural character.
This method, known as the sugarcane process, is completely chemical-free. It starts with a gentle steam pre-treatment that allows the beans to swell. Naturally produced Ethyl Acetate (E.A.), derived from locally fermented sugarcane, is then used to extract at least 97% of the caffeine. Afterwards, low-pressure steam ensures any remaining traces of E.A. are removed, leaving a clean, flavourful cup.
